Hi Reader, I've made vegan pecan pie all kinds of ways over the years. So I decided it was time for some bars, and I wanted them to be oil-free, similar to this pecan pie recipe. But I also wanted them to taste more decadent, with an extra gooey and sweet filling that will wow whoever you decide to share them with this holiday season. I wasn't prepared to find these as irresistible as I did! I've made them twice in the past week, and ate more than I care to admit. π With just 11 ingredients (plus salt and water), this is very much a "more than the sum of its parts" kind of recipe. βVegan Pecan Pie Barsβ
For the crust, I combined two of my favorites β this vegan gluten-free pie crust made with almond flour and my oatmeal pie crust. The result is a surprisingly simple, oil-free crust option. The oats make the crust just tender and chewy enough, while the natural fat in the almond flour gives it structure and serves as a binder. The hint of cinnamon in the crust pairs so nicely with the sweetness and pecans. π Save it on Pinterest:
