I didn't for most of my life. And once I did, I was so bummed thinking about all the time wasted eating mediocre, store-bought stuff!

That's when it dawned on me, salsa is a lot like salad dressing.

What I mean is, homemade is easier than we think, and the results are soooo much better. In other words, it's worth it.

I've been making variations on this easy cheese dip since 2012, after seeing Miyoko Schinner make hers at a vegan expo. Not only was it delicious, I couldn't believe how easy it was!
After all these years, it's still just right. 😍

Mild and creamy, this simple dairy-free take on queso fresco is perfect for topping tacos, salads, and more.


With brown lentils, jalapeno, plenty of spices, and optional walnuts, this wholesome taco "meat" is oh so satisfying!
