Hi Reader, I set out to make a simple bean salad. Then I thought... why stop there? Well, that's not the whole story. While brainstorming ways to make it extra special, I came across a recipe online from The Kitch'n for a grinder bean salad (not vegan). If you're not familiar with a grinder, it's basically an Italian sub loaded with deli meats, cheese, lettuce, pepperoncini, and Italian vinaigrette. At the same time, I'd been thinking about creating a vegan antipasto recipe. Since there's so much overlap between antipasto and grinder flavors, the two ideas naturally came together in this hearty bean salad. Antipasto-Inspired Bean Salad

This carrot salad is perfect for lunches, potlucks, and backyard cookouts. Easily adjust the dressing to be more or less spicy and/or sweet.
