NEW Bean Salad Inspired By Antipasto


Hi Reader,

I set out to make a simple bean salad. Then I thought... why stop there?

Well, that's not the whole story. While brainstorming ways to make it extra special, I came across a recipe online from The Kitch'n for a grinder bean salad (not vegan).

If you're not familiar with a grinder, it's basically an Italian sub loaded with deli meats, cheese, lettuce, pepperoncini, and Italian vinaigrette.

At the same time, I'd been thinking about creating a vegan antipasto recipe. Since there's so much overlap between antipasto and grinder flavors, the two ideas naturally came together in this hearty bean salad.

Summer Cookout Recipes

"He grilled them about 12-15 minutes on high. They held up very well and were a hit with family. Yay! I may have finally found my go-to burger recipe!"


This carrot salad is perfect for lunches, potlucks, and backyard cookouts. Easily adjust the dressing to be more or less spicy and/or sweet.


I've made these cooking twice in the past week. I doubled the cinnamon in the last batch. 🙌 So good!
They're crisp on the outside, chewy in the middle, and couldn't be easier.
