Hi Reader,

Last week I realized I had a surprising amount of canned pumpkin in the pantry. So naturally, I decided to turn it into a new recipe.

If you're anything like me, as soon as September hits you start picking up a can of pumpkin here and and a can of pumpkin there. You know, just in case.

I guess "just in case" means different things for each of us, but when you create recipes for a living, there's nothing worse than having a moment of inspiration and then realizing you don't have the key ingredient you need.

I don't have a lot of pumpkin recipes on the blog, but I definitely have a few favorites, like:

Vegan Pumpkin Brownies

Pumpkin puree gives them a fudgy yet cake-y texture. With cocoa, pumpkin spice, and cinnamon, the flavors are definitely fun and perfect for fall!
