Last Minute Potluck Ideas!

Hi Reader,

Life sure gets busy this time of year.

Maybe you were invited to a Friendsgiving potluck or a neighborhood get-together, and you waited until the last minute to decide what to take. 🫠 Eeek!

I think we've all been there at some point.

So I thought I'd share some last-minute fixes with you. These recipes:

  • are simple to make
  • use common ingredients you hopefully already have (because who wants to go to the store right now?)
  • and are delicious and "regular" enough 😎 to be a hit with any crowd

Oh, and they're all vegan, of course!

No special equipment and only 10 minutes of hands-on time for this tender, spiced cake.

Craving a pecan dessert but don't feel like making pie? How about a batch of easy pecan cookies?

Talk about quick and easy. When in doubt, offer to bring the cranberry sauce! 😎

Pickled veggies might seem like an unusual addition to Thanksgiving, but honestly, they're kind of perfect! The burst of acidity cuts through heavier dishes, and by incorporating seasonal produce, herbs, and spices, they're suddenly quite festive!

If you have mushrooms, breadcrumbs, garlic, and herbs, you can whip up a batch of these stuffed shrooms in no time.

Everyone will love the contrasting flavors and textures and overall wholesome vibe of this simple wild rice dish.

You'll be the hero of the get-together when you show up with this simple, classic gravy that's both vegan and gluten-free.

With tart cranberries and a touch of jalapeno, this colorful salsa is super easy to make and even easier to eat!

Just one bowl and 40 minutes to make a batch of these spiced, fudgy-yet-cake-y brownies.

These always get rave reviews. Plus, they travel well and double as a dessert and snack.

Hi Reader, Though I've never been much for superstitions – or tradition, for that matter! – when you grow up in the South, eating black eyed peas on New Year's Day is a given. But why kick off the year with plain black eyed peas when it's so easy to make ROCKSTAR B.E.P.s instead? 🙌 A few tasty additions like dried herbs and spices, onion, garlic, and canned tomatoes make these so good no one will ever miss the ham hock. I like to cook black eyed peas in the Instant Pot, but if you don't have...

Hi Reader, Do you like harissa? 🌶️ I sure do! When most people think of harissa (affiliate link), they probably think of harissa paste, but I find myself using the dry spice blend (affiliate link) much more often. I like that it keeps longer than harissa paste, and it's just so easy to incorporate into dishes anytime you want a boost of that earthy and lightly smoky+spicy flavor. One Pot Harissa Quinoa Though harissa originated in Tunisia, it's also popular in Moroccan cuisine. Here I paired...
