Hi Reader, In case you missed it, I sent an email on the 14th with some of my most popular "classic" Thanksgiving dinner recipes. The problem is, I have so many favorites, it's always difficult to narrow it down! Also, we all have different tastes and dietary needs (or are accommodating guests who do)... And maybe you're just a total rebel π and like to try new things every year, which by the way, I completely agree with! π So today I thought I'd share some of my slightly more unique holiday recipes that deserve consideration just as much as the vegan turkey and gravy! I absolutely love this chickpea loaf. It's savory, wholesome, and loaded with satisfying texture thanks to chickpeas, mushrooms, kale, walnuts, and wild rice.
With sweet potato, kale, and seasoned soy curls, this fall-inspired pot pie is healthy comfort food at its best!
Another gluten-free option, with its balance of savory, sweet, and tart, this protein-rich, chewy tofu just might be the surprise hit of Thanksgiving dinner!
