Hi Reader, I'll admit, I'm jumping the gun a little with this recipe. 🍂 But it's easy to make, and leftovers keep for days...so why wait for Thanksgiving? Fall is my favorite time of year for food and I have a tendency to lean into it! 😁 I'm sure I'm not alone here. I didn't grow up with wild rice, but my husband did and really loves it. So I thought I'd put my spin on an autumn wild rice pilaf. The wild rice is cooked in broth (because it tastes so much better than cooked in water), then tossed with sautéed shallots, carrots, celery, and dried herbs. Add a squeeze of lemon and some toasted pecans and dried cranberries, and you've got a vegan gluten-free side dish that's delicious ANYtime!
