Hi Reader, Do you get excited about Halloween? I've never been much into it. No particular reason, other than I'm kind of lazy about holidays, in general. 😅 As a kid, obviously I loved it! Because candy. 😍 Plus, since we don't have children, there's never been much of a reason to get involved with the festivities. But this year, I decided it's ridiculous that after 7 years of blogging I didn't have a single Halloween-themed recipe! So I decided to create a few... There's these Black Cocoa Cookies (which really, are more of an adult cookie - oops), the Dirt Cups I shared last week, and now these delicious Jack O'Lantern Stuffed Peppers! We enjoyed these SO much that I plan to skip the carving and make them year-round. Heck, sometimes I might just make the bean and rice filling to enjoy on its own! And now I'm finished with Halloween for a while, maybe until next year. 👻
They're filled with a blend of chewy black rice, creamy black beans, fire-roasted tomatoes, and Tex-Mex spices. Something about the combo is so satisfying! You can easily switch things up, too. Try different grains, beans, lentils, tempeh, etc, and different flavor profiles! They'd be great with the more classic Italian flavors usually found in stuffed peppers.
