Hi Reader, I've had pistachios on my mind since I shared these pistachio cookies a couple of weeks ago. I don't remember how I decided to make pancakes, but I'm glad I did! No joke, these really surprised me. It's the sort of breakfast recipe that feels a little fancy, decadent even, but they're easy to make and equally as great as a snack.
