​Cheesecake Pudding​

Initially, I'd planned to test the recipe with a base of silken tofu, similar to my tofu cheesecake.

Then I realized I didn't have any silken tofu! I had just gone grocery shopping and wasn't about to go back. So I had to pivot...

I knew cashews would taste amazing and create a really rich and creamy pudding. I also have a lot of almond flour on hand, so I gave that a whirl, too.

And now I'm glad I had to rethink the recipe because I'm telling you, this pudding is too delicious, like, we-couldn't-control-ourselves kind of delicious.
