Hi Reader, I am in LOVE with this salad! I don't even know what to say, other than... you have to try it. 😍 I don't care about trends, but even I've noticed bulgur has been having a rather long 15 minutes of fame thanks to Jennifer Aniston and her favorite salad. As we move toward fall, I thought it would be fun to do a bulgur salad with seasonal veggies. But instead of the usual suspects, like roasted sweet potatoes or squash, I wanted to stick with the good old standbys that can be eaten raw – carrots, celery, cauliflower, and arugula. Since there's nothing to cook (other than bulgur, which is quick), the salad comes together in no time and manages to be light and refreshing while still feeling festive! Bonus: swap quinoa for bulgur to make it gluten-free!
The dressing is a simple orange vinaigrette that pairs really well with cranberries and the mild, nutty flavor of bulgur. I intended to experiment with an oil-free version this week, but time got away from me! If you want to replace the olive oil, I have a feeling 2-3 Tbsp of tahini plus a little extra orange juice will taste amazing. More Hearty Salads
