Hi Reader, If you've ever made coleslaw, you know it's pretty easy. For the dressing, most recipes start with mayonnaise, then add more acidity, a little sweetness, and some celery seed. I'm not sure what took me so long, but it occurred to me that I could easily adapt my oil-free mayo recipe into a coleslaw dressing. And I have to say... it's a delight! With no mayo in sight. π Just blend up the creamy dressing, toss it with shredded cabbage and carrot, and you've got yourself a classic vegan coleslaw for your next summer get-together.
