Baked Oatmeal Bars (NEW)


Hi Reader,

I have a versatile new recipe to share that I hope you'll really enjoy.

It's nothing too exciting 😊 just an all-around tasty oatmeal bar that's:

  • easy to make
  • great for breakfast and snack meal prep
  • lightly sweet, with cozy flavors of cinnamon and vanilla
  • satisfying thanks to the whole grains, nuts, and protein of silken tofu

What I really like about this recipe is that it's delicious as-is but also serves as a great base recipe.

After you make it once, you'll see how easily you can customize the bars with all kinds of fun spices, extracts, dried fruit, nuts, seeds, etc.

Weekly Recipe Picks

I love this grain salad for weekday lunches. It's fresh, crunchy, savory + a little sweet, and totally satisfying! It's the kind of dish you want to make again and again.


To get rid of tofu's mush-factor, we crumble and bake the tofu first. This dries it out and firms it up, giving the burgers great texture.

Change up the flavor profile for endlessly unique tofu patties that are as great on a salad as they are on a bun!


The flavorful tempeh mixture comes together quickly on the stove. A layer of refried black beans makes the tacos even more filling and helps hold it all inside your tortillas.


With lentils and TVP (or soy curl crumbs), this is my vegan take on Skyline Chili's unique dish. Serve it over veggie dogs, potatoes, or spaghetti, and you've got an easy meal that's ready in just 30 minutes!


I just made a double batch of this cheese today to photograph a new recipe: The BEST Vegan Lasagna. Stay tuned for that one!
