Hi Reader, Back in 2020, I shared my oat flour banana bread, and it quickly became a reader favorite. I think it works so well because oat flour and really ripe bananas just "get" each other. I recently tried turning that batter into muffins. They were good… but the loaf still won. So I started experimenting, and one random question led to another: could I make vegan banana muffins with just 5 ingredients? After a few rounds of testing, I landed on a version that feels simple, cozy, and very much in the spirit of that original banana bread, just reimagined as the simplest muffins possible! 5-Ingredient Banana MuffinsNow, before anyone replies with "Lori, you don't know how to count. That's not 5 ingredients!" Okay, yes — if you add vanilla, it's six. But you don't need the vanilla to make a successful and delicious batch of muffins. ;)
