Hi Reader, I have a vegan meatball recipe on the blog that I love, but I wanted to come up with another option that's gluten-free for those of you who can't do seitan or breadcrumbs. Given my love for tofu, it was an easy choice as the base, but I worried that it was destined to create a mushy meatball. 🫠 Then it occurred to me to try chickpea flour as the binder—I mean, it works for pakora and chickpea flour omelettes, right? And it turned out great! The texture actually exceeded my expectations. Clearly, Mark loved them, too, because we inhaled that first batch like nobody's business. I tested them a couple more times to get the flavors dialed in and make sure it would also work with extra-firm tofu (vs. super-firm). All you need are 10 ingredients, plus a few optional ones.
